All three can translate happy. Each one fits a different situation.

No feminine form

feliz works for everyone: un niño feliz, una niña feliz. There is no feliza.

The z turns into c

The plural is felices. Spanish writes c, not z, before an e.

Ser or estar

Both work. Soy feliz speaks about your life in general, estoy feliz about how you feel right now.

Before the noun in wishes

Usually it follows the noun: una familia feliz. In wishes it comes first: ¡Feliz viaje!
